MEET THE PRODUCER : Nahun shares a processing facility with his brothers and father, which means they were able to build a very impressive set-up. It was also clear that Nahun cares deeply about the quality of the coffee he is producing and is continually asking how he can improve the quality of his coffee.
The farm is located in Santa Barbara Mountain, near Yojoa Lake (the only lake in Honduras). Lake Yojoa is an impressive natural reservoir of water of volcanic origin; it has an incredible diversity of aquatic animals and 50% of the bird species of Honduras are found here; On its coasts are found important archeological sites showing the existence of prehispanic civilizations; its panoramic views are simply awesome.
ABOUT THE PROCESS: The cherries are picked carefully at peak ripeness and then the cherries are put in plastic barrels for an anaerobic fermentation for 72 hours; the cherries are picking when are ripe, then, are put directly on a concrete floor to pre-dryer for 3 days, next, the cherries are put inside the Solar dryer to finish the drying for the other 10 days.
