This lot begins and ends with CoopeAgri, a cooperative that owns and operates a state-of-the-art mill designed to receive cherries from many small farms and consistently process a well balanced regional blend. CoopeAgri is a cooperative of Costa Rican coffee farmers that was created more than 50 years ago.  For the past ten years, they have been working hard to improve the quality of their methods in order to bring to life coffees they can be proud of. 


The Brunca region is marked by mountainous terrain and volcanic soil. High altitudes provide the cool climate that is ideal for growing sweet and dense beans. Farmers selectively handpick cherry and deliver it to a nearby wet mill. The mill follows processing methods that are designed to carefully protect the environment from degradation.
In Costa Rica, this typically means using centrifugal force to remove mucilage, instead of fermenting. This method helps reduce water use and limit the amount of excess nutrients in water runoff from the mill. Parchment is washed and sun-dried.
