MEET THE PRODUCER: Mauricio Perez from the beautiful highlands of Huehuetenango, Guatemala, a seasoned coffee farmer, embarked on his journey in the world of coffee cultivation 28 years ago when he acquired his cherished piece of land. As a symbol of happiness, he affectionately named the farm “El Divino Niño,” which means The Divine Child.
ABOUT THE PROCESS: The journey begins with the delicate pulping of the ripe cherries using a manual pulper. Next, the pulped beans are placed in fermentation tanks, where they remain for 30 hours. After the transformative fermentation, the coffee beans are gently washed in washing channels.
